The Greek Chop
This refreshing, crunchy and herby bowl is what we like to call a spoon salad. Every ingredient is finely chopped and tossed in a lemony, garlicky yogurt-dill dressing, then seasoned just right. Ground chicken is folded into a mix of classic Greek vegetables—tomato, cucumber, onion, olive, and bell pepper—brightened with pops of banana pepper, fresh dill, and a base of lightly oiled quinoa.
